Ingredients:
1 cup (or more) of your favorite nuts, roasted and unsalted.
(i used walnuts, pecans, and almonds)
1 cup honey
2 tbs of butter
1/4 tsp of salt
1 tsp cinnamon
1/4 tsp nutmeg
Hardware:
1 qt sauce pan
ice cream scoop
large heat proof bowl
parchment paper
candy thermometer
4 chop sticks
instructions:
Bring the honey, butter, salt, and spices to boil in the saucepan over medium heat. Let boil for about 10 minutes until the honey becomes much darker in color. 250 degrees if you're using the candy thermometer. Once the honey is done take it off the heat and let cool until it is done bubbling. add your nuts and stir until all the nuts are evenly coated. (if it looks like there is too much honey for your nuts, add a little more nuts.) Move the honey nut mixture into the heat proof bowl, butter up your hands and ice cream scoop. Once the mixture is just cool enough to handle form it into 12 little balls. Skewer the 3 balls onto each chopstick, wait for them to cool and dry. Enjoy!
